is there a setting that can put a description in the text entry field that cannot be interpreted as a default such as like a tip e.g." Enter your title here". Perhaps with a parameter to tell the software to ignore it as input "!!Place your title here!!"

Why don't you use the "field title" for such description? I'm not sure why another field could add more information to a customer.
Or could it be you mean you want to have an extra decription field to added next to the "field title"?
Maybe you could explain it a bit more to me in case I'm misinterpret your question.
